The overall objective of the work is to produce a report that examines the capacity for commercial freezing of fruit & veg produce within Wales. Frozen food is having a resurgence in popularity and has welcomed many high-profile marketing campaigns and endorsements. Organisations such as The British Frozen Food Federation are championing the nutritional, economic and convenience benefits of the sector. The report will look at the availability and practicality of small scale producers using premises-based freezing facilities and business advantages this could herald.
