Waterford City & County Council now require the services of a competent catering consultant with the specialist skills in developing an appropriate catering solution for Mount Congreve visitor attraction. The consultant should have the following skill sets:◦ Experience in creating catering plans for significant visitor attractions.◦ A track record in working with stakeholders to a tight deadline.Services provided by the Consultants include, but are not limited to the following:◦ Delivery of an overall catering solution.◦ The development of a business case in order to place the food operation in a commercial context as well as any commercial advice related to the catering and ancillary facilities to ensure the success of same.◦ High level advice on marketing and branding for the catering facility.◦ Advice on identifying suitable operator for facility.◦ The creation of a menu suitable to address the demographics identified and the availability of local products, Mount Congreve has a substantial walled garden and has traditionally grown its own vegetables.◦ The development a tariff regime in association with the menu.◦ The development of a coffee offer with pricing.◦ Advice on kitchen layout design, the type and level of fixtures and fittings to address menu developed and COVID 19 Protocols. Advice on the practicalities needed to run a efficient and cost effective operation.◦ Liaising with the main design team in terms of front of house design and the incorporation of COVID 19 Protocols.◦ An operations Management Plan for kitchen and front of house.◦ Stakeholder consultation and securing/ensuring agreement at all stages in the development of the proposal.◦ Retail Outlet: design considerations and retail food product range and potential sales.Note: tender submission are to be via the etenders web site only, hard copies will not be accepted.
